Roccolo, which takes its name from a cylindrical stone building located in Valle, is the result of a complicated cheesemaking process. This unpasteurized, handmade cheese has a soft texture near the rind and gets slightly harder toward the core. Made only from fresh milk taken from brown alpine cows that graze on Valtaleggio's pristine pastures, it is known for its extraordinary complexity, in both flavor and aroma. Ripened on wooden boards in a cellar that is rich in molds, Roccolo's rind develops a variety of colors and fragrances.

I found this cheese satisfactory to my tastes, but my family found it too strong. It does get pretty ripe, but when I trimmed of the outside it wasn't bad.

A heady cheese that is best at room temp. As stated in the other reviews, it will need to breathe before eating. The rind is quite yeasty and the outer cheese is overripe. The cheese is shipped vacuum packed (shame) but is delectable.

I enjoyed this cheese. Reminds me of a very good sharp cheddar. Don't let the initial aroma set you back. I cut off the rind. I enjoyed with a vinho verde and some chunky pate.

excellent cheese plate candidate. have not tried it melted, on salads or in sandwiches, seems like it would be best unadulterated. tho' great by itself or with fresh pear or apples. much better if allowed to sit at room temp for an hour or so.

"Roccolo's rind develops a variety of colors and fragrances." Expect the initial "fragrance" to be quite strong. However, after letting the cheese breath a bit, the taste was everything the descriptions says. A very pleasant surprise, especially for the price. Outstanding is accurate.
