Provolone is a northern Italian cheese that can be thought of as Mozzarella's older brother. Take some Mozzarella, form it into your favorite shape, and rub it down with brine, bind it with rope and hang it from the ceiling for a few months and Voila! - you have just made Provolone. There are two varieties of Provolone. Dolce (meaning sweet) is the mild version and Piccante (meaning sharp) is its spicy, more aged counterpart. We love this Piccante version, which is rarely available in the U.S .and much more interesting than the mild Provolone most Americans have come to know. One of the great sandwich cheeses, Provolone Piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette.

I bought this product for myself originally and I loved it. I shared some w/ my Dad and he loved it as well. I find that most provolone that is sold is the mild ones. While the mild ones are okay I must say I rather sharp cheese over mild any time.

This cheese makes superb grilled cheese sandwiches in addition to being good with slices of apple or in recipes where some distinctive flavor is called for. One of the best things about Provolone Piccante is that it keeps for a very long time without getting moldy after the package is open.

Although this cheese is better than unaged provolone, it is not what I'm used to in Italian delicatessens. The cheese they sell is so sharp that it makes you sweat. This one is ok, but not the best.

Don't think of this cheese as provolone. In the US, that's a bland cheese that's the standard of every sub sandwich. This cheese is very, very sharp and bears little resemblance to what Americans think of as provolone. It's a terrific cheese with any strongly flavored meats.

I have a special three cheese Chicken Pesto dish I do. This product was a great enhancement to the dish. An add in to a tossed salad. Just a real good snack.
My only real complaint is it sits on a UPS delivery truck until late afternoon. The product however,was unaffected still very tasty.
IT'S HOT HERE !!!!!!!!!!!!!

I served this Provolone with some Port wine before dinner and it gave all my guests happy feet.
That's right - Happy Feet. It tastes sooooo good that everyone just wanted to dance.
If you hate store bought pre-packaged Provolone, but love a Provolone with a medium sharp flavor yet a smooth aftertaste and buttery texture - buy this product.

Very flavourful. If you're having a few cheeses at once it's a good idea of offset this one with a milder cheese as well. I would buy this cheese again.
