Provolone is a northern Italian cheese that can be thought of as Mozzarella's older brother. Take some Mozzarella, form it into your favorite shape, and rub it down with brine, bind it with rope and hang it from the ceiling for a few months and Voila! - you have just made Provolone. There are two varieties of Provolone. Dolce (meaning sweet) is the mild version and Piccante (meaning sharp) is its spicy, more aged counterpart. We love this Piccante version, which is rarely available in the U.S .and much more interesting than the mild Provolone most Americans have come to know. One of the great sandwich cheeses, Provolone Piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette.

This provolone makes your tongue do the happy dance. It's tangy and sharp, but in a gotta have more way. Fantastic with a sandwich of roasted chicken, fresh spinach and tomato on a nice toothy multigrain bread and a nice chilled dry white.

This is the best provolone I have tasted in quite a while. The pound I purchased barely lasted a few days. The aroma and taste were too tempting to resist. No aftertaste and just the right amount of texture and flavor. Absolutely a wonderful accompaniment for a glass of Cabernet. If you like a strong flavored, smooth cheese, you will love this one.

This is so smooth it seems mass processed. I am looking for the cheeses of my boyhood, especially the sharp provolone that burned the top of my mouth with its pungent oils, hardness and striations. This cheese was very tasty and I would buy it again, but it still isn't what I am looking for in my provolone.

I loved this product. My taste buds puckered just right when I bit into this deliciously sharp cheese. It is NOT like the provolone you buy at the deli! In fact, it is a completely different cheese. It is hard enough to slice or grate, yet it has a smooth and somewhat "creamy" texture. I haven't tried melting it, but I would imagine it would be great melted on a roastbeef sandwich or just a nice thick piece of roastbeef. I would recommend it for salads, too. Or pasta!

This reminds me of growing up in a great Italian neighborhood having the best delis and the provolone hanging from the ceilings. It is a bit sharp with the lasting bite that you want from a provolone. It is not the type I would put between slices of bread but enjoy on a cheese tray with other cheeses or by itself.

It's hard to come by good quality imported sharp provolone where I live. I love it in Italian sandwiches, in salads, with crackers and with toasted bread for breakfast. I'll even go into the fridge and cut a slice and enjoy it so much, just plain.
