Boschetto al Tartufo Bianchetto is about as amazing as a cheese gets. Our friends at Il Forteto in Mugello have now created another outstanding version, aged for four months. Instead of a blend of sheep and cow milk, Stagionato is made from pure sheep's milk. The master cheese maker at Il Forteto has still maintained a precious harmony between the pronounced, pungent taste of the extremely scarce (and expensive) white truffle and pure sheep's milk. The scent and flavor will still bowl you over with delight. The base is firmer and drier, so it's easier to add a dash of truffle flavor to your favorite dishes. If you love our original Boschetto as much as we do, the Stagionato version is a must try.

Tried for the first time. The combination of cow and sheep's milk with truffles produces a unique flavor, stronger and more savory than I was expecting. I thought it would be a more subtle cheese, and it was anything but. Worth a try, particularly for fans of truffle and goat or sheep's milk cheese.

This cheese is beyond incredible. Best to leave the cheese at room temp for about 10 - 15 minutes before serving. This is a real treat (we order it several times a year).

I was hoping for someting more spectacular... It did have a light aroma of truffles but it didn't have the depth of truffle flavor I wished for. I would rather use white truffle butter to add intense truffle flavor to a dish (If you don't have a fresh truffle). This cheese remind me of aged sheep Gouda. It could be sliced or graded over pasta or risotto.

This is very similar to the higher priced version of this cheese (the boschetto al tartufo- which is much better). However this cheese is a more firm or Romano style cheese. It is great to grate over a pasta/meat/stir fry dish- really any dish that could use the essence of white truffle, which is most dishes in my opinion.

We have used this on several pastas--with grilled chicken and zucchini tossed with gemelli, mushroom and onion cream sauce over linguini, and grated over a soup with spinach and nutmeg. The salty bite of pecorino is delicious, and the earthy tang of the truffle sends it over the top. I am also pleased with hardiness--I figured that we'd have to use it quickly once we opened it, but the firm, dry texture has held up well wrapped tightly and sealed well in the fridge cheese drawer.

This was quite a find - I was looking for Tartufino Speziato (another absolutely outstanding truffle-infused cheese, although soft in texture) and stumbled across this Boschetto al Tartufo Stagionato - to my happiness, this cheese was excellent! As a dry-style cheese, we enjoyed it handsomely grated atop a seared scallop and mushroom ravioli appetizer paired with Harvest Moon Winery Russian River Valley Pinot Noir. This must be the heaven...
