Parmigiano-Reggiano as a delicious, full-flavored eating cheese. Since 1907, Fantacini has produced Parmigiano Reggiano in their dairy in Villa Sabbione (near Reggio Emilia).

Parmigiano-Reggiano began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna, and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives. No machinery. No gimmicks. Just sweet, fresh milk in its pristine state, the artisan's ancient skills, and nature's own good time (aged from 18 to 36 months). What you see today is just what the knights, serfs, saints and kings of old ate!

This product is Kosher for Passover, too. Its production is controlled from the beginning of the milking through the aging process.

I bought this because I couldn't find any authentic kosher parmigiano-reggiano in my neighborhood. Usually kosher food tastes inferior, but I was pleasently surprised by this- it had a nice nutty, and only slightly salty flavor. It is best grated on top of soups, pastas, etc. or perhaps thinly-sliced. I personally find this parmesan too hard a cheese to eat by the chunk.

If you've only used pre-grated Kosher Parmesan in a jar--with anti-caking agent added, of course--then you have no idea what Parmesan cheese is supposed to taste like. This is the real thing! You will find yourself seeking out recipes that call for cheese, just so you can have an excuse to taste it. Don't be put off by the price; the cheese lasts a while, and is worth it.
