I don't know enough about parmaggiano to tell if this a great example of this variety of cheese. I do know that it works great for me. It even had less rind that had to be discarded. Yes, I get upset if I have to throw away a large chunk of the wedge I bought.

Having lived in Bologna, Italy this is the only Parmigiano I will eat! This is the BEST and only real Parmigiano. Anything else is imitation. And they do serve it grated on pasta in Italy as well. It would ruin the dish to serve anything less. However, never put this or any other cheese on a shellfish dish, that is a big no-no!! As is cappuccino after dinner, but that is another discussion for another time.

This is a spectacular cheese; the only drawback is the price, even when on SALE IT IS COSTLY. I prefer it to my little italian market, but the market price is almost $2.00 less. Not only is the real parmigiano-reggiano far more complex and delicious than anything simply called "parmesan," it's actually lower in sodium as well, which is important to some of us. This cheese has about a third of the sodium of domestic imitators that are neither made as carefully nor aged as long. Save the rinds and use them in soup, risotto, or any long-simmering dish that could benefit from the subtle nuttiness and creamy complexity of this award-winning cheese.

If you have a vacuum-seal food keeper unit at home, reseal the cheese in a vacuum bag after each use and keep it in the fridge and it will virtually last forever, so it can be economical as well.

I just wish that iGourmet would also ship us some scraps with it when we buy. They must get close to a pound of crumbly breakage when cutting up an 80 pound form, and while it wouldn't stay fresh nearly as long (even if vacuum sealed after each use), but would provide an instant way to taste and use some of it without cutting into your pound cut.

And yes, I grate it for use in just about every recipe that calls for parmigiano-reggiano; it tastes better and it saves sodium and what's not to love about that? Occasionally, when the day's dietary requirements allow it, I'll eat some thin slivers of it on hearty crackers. Simple pleasures are still the best.

I have ordered this cheese for several years and given it as a gift. It is the only Parmesan that I will buy due to its terrific flavor and texture. It beats any supermarket parmesan by a wide margin and you won't even look at that 'green can' again. I was hooked the first time I tasted it. Now I know why Italians eat it as a snack!

I use to buy this kind of cheeze from an old Italian store here in New Jersey. They've since passed on. Couldn't find it anywhere till now.
If you're looking for great Parmigiano, get this one. I use it when I make meatballs for my italian gravy, in sauces and of course pasta!
