The Italians are horrified by our usage of this, the world's most famous hard cheese. Here in the States, it is thought of as purely a grating cheese. The rest of the world savours Parmigiano-Reggiano as a delicious, full-flavored eating cheese. It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks. Just sweet, fresh milk in its pristine state; the artisan's ancient skills and then nature's own good time (aged from 18 to 20 months). What you see today is just what the knights, serfs, saints and kings of old ate!

Parmigiano Reggiano is simply the best cheese of all time. I prefer it cut in medium-thin slices and served alongside olives and cashews and a good salami. Top it all off with a must have rich red wine. The texture and flavor combinations are out of this world. I usually do not like to waste it by grating it, but for a deliciously quick meal i boil some whole wheat pasta; add a pat of butter; grate some Parm Reg on top and delicately stir it in. Don't forget the red wine. Delisioso!

When I can get and afford real Parmesan I'm always reminded of how utterly superior it is to other cheeses claiming the name. Even Wisconsin and California can't recreate the obvious character and subtle nuances of the real deal. iGourmet's generously sized offering is a good deal on the real deal. I prefer to use true Parmesan much in the same way that I use Extra Virgin Olive Oil: as a compenent that allows the flavor and texture to really shine.

I never cared much for parm, but I also never knew it could be like this: moist but crumbly, with the tanginess and texture of an aged cheddar and a sweet aftertaste. The little pockets of fat and crystals make it hard to stop eating this cheese right off the block. It's absolutely amazing melted, too. Just the aroma of the cheese is yummy Italian warmth epitomized - they should make a candle!

The "green can" stuff is an abberation of the true Parmigiano Reggiano. I am a relative newcomer to the sublime taste, texture and utility of this amazing cheese. What a versatile cheese! I shred it and put it in a big ziploc bag in the freezer. We use it on pasta, pizza,and salads, in cheese sauces and for snacking (great on nachos). My husband loves with vegetables, and he usually won't eat them!
