It is called a torte because it consists of alternating layers of Gorgonzola Dolce and Mascarpone. The texture is, therefore, soft and spreadable and the flavor is utterly addicting. The blue flavor of the Gorgonzola offers a medium tang which is complemented by the creamy smoothness of the Mascarpone. It is the ultimate party cheese - a much more approachable cheese than either Gorgonzola or Mascarpone by themselves.

We use this cheese on crackers. It is best on softer type crackers such as Ritz[...] these do not keep as well after opening.

This is the perfect compromise for those who can't decide between a blue and a triple creme. It's also ideal for those who like a nice tangy blue flavor without being kicked in the teeth by it. It spreads easily on even the most delicate cracker, but make sure to try it on a nice crisp red apple too!
