Stelvio is a typical mountain cheese made with fresh pasteurized milk from the high alpine pastures around the Stelvio Valley which is located at the foot of the Stilfser Pass (2,758 meters). Made in the finest artisanal tradition, it received the prestigious DOP (Protected Origin) recognition in 2003, which certifies both the quality and historical authenticity of the cheese.

It has a red-brown rind, straw-colored paste and irregular small sized holes. Its soft, slightly elastic texture and the typical intensely aromatic flavor make it a unique specialty of its kind. This is a "big" cheese and does share some similarities to Epoisses, but with a firmer texture. It has been aged for 60 days. Great to melt on sandwiches or an alternative for fondue and a great addition to any cheese tray.

My wife found a recipe that called this cheese out. After purchasing this cheese, I picked up the wrapped wedge and found the texture to be soft and flexible so I was excited to dig in. I quickly sliced through the plastic wrap and examined the now unwrapped slice. I am not afraid of bad smelling cheeses so my first whiff was intense but I still wanted to take a bite. I can only explain my next experience was some kind of out-of-body experience. My tongue rolled into the back of my mouth and I started to gag. I wanted to spit it into the sink but I was in fear that the horrible smell would foul up my garbage disposal so I went for the garbage can. Warning! This cheese will adhere its odor to anything it touches. Including taste buds! It took me four washings of my hands to get this repulsive smell off of my fingers. No food or drink will remove the taste!I can only compare this cheese to the foul flavor that one gets with an infected tooth. I am certain that I have been scarred for life.

It was Halloween and we thought the family would enjoy a fondue. As my son was melting, one by one, family members came into the kitchen and said "what's that smell?" My son was the only one brave enough to taste and didn't like it. It ended in the trash.

Upon openeng, was turned off by it's smell. Once I tasted it, I was pleasantly surprised. Great with crackers, on sandwiches combined with lunch meats, on pizza and pieced in salads.
