Unlike our other Pecorino's, this one is not aged. Pecorino Toscano is a young 100% sheep's milk cheese, only about 40 days old when it arrives on our shores. Because it is a young cheese, it is somewhat discreet; almost shy. As the cheese first hits your tongue, you detect a hint of Tuscan herbs, grass and wildflowers. The aftertaste it leaves on your palate is a wonderfully complex flavor that is hard to describe, but easy to enjoy. Authentic Pecorino Toscano is name-controlled by the Italian Government, meaning that in order for a cheese to bear the name, it must be made to exact specifications and only in defined locales. This one is truly a special item.

It brings back a lovely memory of a warm day at a market in Tuscany. The cheese was very warm from the sun and incredible! We ate it in the car on our drive home with fresh bread.

I first tasted this cheese in Italy - when I returned home I immediately set about finding it here in the US. This cheese is wonderful with fruits or just eaten as a quick snack. It also makes a sandwich or panini delicious!

I am allergic to cows milk. I have tried other sheep milk products and they always had a nasty after taste. this cheese is a godsend for me. I had not had cheese on a sandwitch in 4 years. I am glad I found you.

I first tasted this cheese while visiting California's wine country. This was an excellent cheese to pair with fruit, a good bottle of wine and a baguette. It just doensn't get any better.
