Created in 1960 by expert dairy master-producers at Lattebusche in Veneto, Italy, this magnificent cheese is well-known and highly appreciated all over the world. Piave Vecchio (meaning Aged) enhances the already sweet, rich flavor of young Piave through the process of maturing. It has the texture of a young Parmigiano-Reggiano, not crystalline yet nor dry enough for grating, but heading in that direction. It has the toasted walnut character of Gruyere and the caramel-like sweetness of an aged Gouda. Produced entirely from milk from the mountainous part of Veneto, this cheese, served as a table cheese or shredded over polenta, is an ideal choice for anyone who enjoys healthy, all-natural, traditional Northern Italian food.

This is my all time favorite cheese.

12 month aged variety is good, 18 month variety is PERFECT.

Better than asiago, able to leap my tall buildings of taste in a single bound.

The citrus granular sparkles it contains have to be tasted/experienced to be believed.

A real find!

This cheese is best served with salami and a great Italian red wine.
Perfect for an Italian sunday lunch, or shredded on pasta.
It has a firm tecture yet soft, it has a nutty taste yet creamy, and has a powerfull bite yet ends with a sweet sensation.
By far the best cheese I have ever had.

what a delightful cheese. i received this in my monthly shipment and what a treat! i'm ordering more for the holidays.it starts out great but the finish is what really gets your attention. i sat down last night put out this cheese with a good chianti, olives and some salami - wow!!!
