A cheese typified by a semi-hard, compact paste of pale straw yellow color, with evenly distributed eyes of uniform size. A maturing period of at least sixty days is required in order to obtain Caciottona's soft and delicate flavor, suitable for slicing. The outside is generously rubbed with olive oil, then cracked black pepper is pressed into the rind.

Enjoy this lively cheese with robust olives and ham. For wine, the peppery flavor of this cheese goes particularly well with a Napa Cabernet Sauvignon.

We set this cheese out as an hors d'oeuvre before a party and it was a big hit! Worked very well with wine, but also wonderful on it's own. I loved the peppery, nutty flavor. Perfect with a few simple crackers or bread.

Wonderful crumblies over a salad or eaten as an hors d'oeuvre. smooth pepper taste was a good addition to thin crackers, too.
