A rare cheese that is produced exclusively in Sicily, Piacentinu is most noted for its striking yellow color which results from the addition of saffron during the cheese-making process. In typical Sicilian fashion, this sheep's milk cheese from Enna is flavored with whole black peppercorns. Still made by hand using ancient traditions, Piacentinu is crafted using antique tools and wooden vats. Aged for three months, it has a mellow yet distinct flavor and a dry texture.

A strong cheese which I and my Sicilian friends enjoy. Since the flavor is complex we eat it raw with bread or grated over a simple pasta such as pasta agghiu e ogghiu (oil and garlic).

Recently, I together with 3 sicilian friends sat down with piacentinu, onions, sicilian bread and a bottle of Neru D'Avola. We had found our own Sicily in California. Piacentinu is a firm, oily cheese which can be grated but also eaten in cut pieces. Biting into a piece of this cheese which contains a peppercorn releases a taste sensation that is hard to beat. If you like STRONG cheese forget parmeggiano, pecorino and try piacentinu for a wonderfully rich and unique taste.

Loved by a large group with a broad spectrum of palates. Unusual in appearance so added visually to a cheese board and unique enough in taste to have many guests make inquiries.
