Parmigiano-Reggiano as a delicious, full-flavored eating cheese. It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks. Just sweet, fresh milk in its pristine state, the artisan's ancient skills, and then nature's own good time (aged from 18 to 36 months). Parmigiano Reggiano Stravecchio is aged a full 36 months. At this age, it has a deeper, golden color, and has even more crunchy crystals. Full and fruity with a slightly salty tang, this cheese should be served in chunks with figs or pears or as an appetizer with aperitifs.

We have always thought of Parmigiano as a cheese to be grated over an Italian meal and my wife asked me to order a wedge. We had every intention of using the cheese over salads and on Italian meals but soon realised that this cheese can stand on it's own. Excellent cut into slices with fresh fruit or just on it's own as a 'nibble' when enjoying a late afternoon glass of wine. A real nice surprise.

The best Parmesan I've ever had for plain eating. I prefer their lesser aged cheese for grating on a caesar salds though.

I have used Parmesan Reggianno for years, over the past 2 years I have been introduced to Parmesan Reggiano Stravecchio. I love this cheese, love both of them. I have been more than satisfied with the [...] quality, and price of [@]. The manner in which it is wrapped, #1 packs is perfect for home use. This cheese lasts a good long time since I only buy it about 2X a year.

I picked this because I love the simple sharp reggiano's I can aquire locally.
This surprised me it had less tang and more of a subtle almost fruity undertone, a hard cheese, but softer then the ones I'm used to. A thoroughly welcome surprise.

While flaky when cut, in the mouth it melts smoothly accenting its creaminess. As with any parmigiano, it is sharp at the beginning; however, the aging results in a smooth, round after taste. I would rate this cheese at 4 1/2.

I certainly was very pleased with this product. The cheeses [...] are the best of quality, and I am married to a fullblooded Sicilian, and this parmigiano draws raves from even true Italians. I live near a variety of specialty Italian gourmet food stores, and they don't even hold a candle to these exquisite cheeses.
