Produced in the Po Valley near Treviso, Asiago Pressato is a milder, sweeter Asiago with a springy, pale interior. It is classified as an Italian DOC (Denominiazione di Origine Controllata) cheese, meaning that it is protected by governmental standards regarding the cheese's origin and techniques. Made from pasteurized whole milk and aged for 20 to 40 days, this young cheese has a full, creamy flavor. We suggest enjoying Pressato with crusty Italian bread and a glass of Pinot Grigio!

I served this cheese to guests using the recommendations from the igourmet site. We had this truly splendid cheese with hard crusty italian bread and our favorite Pinot Grigio. It was absolutely wonderfu, and our guests could not believe the unique flavor and texture of this truly splendid cheese. I highly recommend it as an appetizer with your favorite Pinot.

The 3 cheeses that were available were wonderful-and their selection is what led us to purchase them thru igourmet. This is the best cheese! First had it at the International Food & Wine tasting at Epcot...everyone who I have served it to since has loved it as much as we do. Excellent for a cozy snack with wine by the fire or on an appetizer tray with other cheeses and jams for holidays and get togethers...cant go wrong with this cheese for any occasion or purpose !

good quality but I've had better. Their are many
good quality "caseifici" (cheese factories) in all of northern Italy and most produce good quality cheeses. Each have thier own distinct but very subtle taste. You've selected a good, but not great one.
