This was great in several recipes I had that called for Montasio and it was great as a crisp. Montasio wasn't available in any of my local stores so kudos to igourmet.com for having it.

This cheese is best when it is 3 to 4 mths old. The older the sharper, but I enjoy it fresher for after dinner, sandwiches and with polenta

This cheese was a lot harder than I thought it would be. It reminded me of a cheddar. From the description, I was expecting a richer tasting cheese, not one that seemed like a cheddar. The outer edge of the cheese was very hard and it got somewhat softer as you worked your way in. Don't get me wrong, it's not bad tasting, just not what I was expecting.

I used this after dinner sliced and served with a Braeburn Apple, and again with a delicious pear from Harry and David.. Perfection .. By the way this cheese came to my attention while reading a Donna Leon novel about Venice and Inspector Brunetti

I come from this region of Italy and this cheese reminds my of Home! I like to eat it melted on a "frico e patate" or like at my parents home before dinner with a piece of bread and a glass of wine.

I lived in this region of Italy for 3 years. The cheese is great on its own, in a salad or as the locals use it in Frico- fried cheese with potatoes and onions.
