A variation of Ricotta, this pure white, firm, rindless cheese originated in the hot, dry island climate of Sicily. It is made from lightly salted sheep's milk curd that is pressed and dried, then aged for a minimum of three months. Ricotta Salata has a supple, mild taste. It's not at all “sheepy” or salty, but rather has a nutty, sweet milky flavor. Extremely versatile, Ricotta Salata can be used in salads and pasta dishes and is ideal for grating.

I purchased because it was recommended in one of my recipes, but I was disappointed. Seemed very firm and dry and did not shred easily as suggested in recipe but crumbled. Had no taste for me. I used over pasta also and still did not love it. I would not order again.

The cheese was rich, thick, firm and dry - all that Ricotta Salata should be. The only complaint is the weight was a little lighter than 1 pound as indicated in the description. However, it is a cheese that is only eaten in small amounts unless used for cooking. [...]I buy it through [@]every year and I know I won't be disappointed.

Grew up on Dry Ricotta ( a little saltier version from Chicago). Ricotta Salata is great on a hot dish like pasta or roasted vegetables and chicken. It lightly melts when it hits the warm food and this accentuates the lightly salty flavor. Great and reasonable.

This ricotta salat absolutely met expectations. It transported me back to my childhood when we would grate this on our pasta on a visit to a relative's house. It is firm but not granular like many hard cheeses. It has a wonderful dry quality that makes it clean on the pallate.

This is a great product & very good in Lasagna as it is dry & does not make the dish soggy. It is very reasonably priced. Again, I have tried locating this product locally but with no success. I would recommend trying this cheese if you have never tried it before. Fabulous flavor.
