This little-known cheese from the hills of Cuneo in the Piedmont is one of only a few goat's milk blends to come from Italy. It is made today using the same ancient techniques that were used in bygone eras. A very soft, fresh cheese, Rutulin rivals the best French chevres we have enjoyed. In fact, our first note was how uncommon it is to find a cheese like this in the states. Each log of Rutulin is coated with either sesame seeds or fresh (not dried) wild herbs and aged in natural wine cellars, adding to the essence of the cheese. Rutulin is a very special product, one that has been made for centuries and whose recipe has not changed over the years.

My daughter and I were so looking forward to this cheese and planned to order more for the holiday gifts. Rarely have we encountered any food item that we cannot tolerate. Rutulin tops the list of inedibles. I don't mean to be rude, but where was has that "goat" been? (with the three-eyed fish on "the Simpsons"?)SORRY--visual.

i consider this cheese my best find of this year. i took a chance on this goat's milk cheese from italy because of the way it was described, choosing the herb-coated variety. i did not care for the flavor of the herb coating, and will try the sesame seed coated variety next time. this is an incredibly rich, creamy, and flavorful cheese. it was great on whole wheat ritz crackers, and in a green salad containing mixed greens, walnuts, apple slices, and my homemade vinaigrette dressing. this cheese is very smooth, with a flavor similar to, but milder than, bleu cheese... which surprised and delighted me. bravo!

We had the herb-coated Rutulin first as a side with grilled chicken and vegetables, spread on bruschetta. It was compared to gorgonzola or bleu cheese, and everyone agreed it was the most flavorful goat cheese we had ever tried.

We finished it off as part of a cheese and vegetable platter (also with the scamorza). The powerful flavor dominated, maybe a little too much. If I had any left over, I would for sure have tried it in a frittata or on pasta. It would also be good as part of a chopped salad if you used a very light hand.

Wonderfully flavorful on frou-frou crackers, this very intensely flavored, soft and easy-spreading cheese needs only a hint on each cracker for full-bodied flavor. Will continue to purchase.

First served this (the sesame) at a hobby club party, so tastes were very eclectic--some didn't care for it at all, others couldn't get enough of it. It is an unexpected taste from its first appearance. It has a stronger edge than other chevres I've had, but a very nice finish on the end palate. For some it took two tastes to start enjoying this rare treat. Pinot Grigio would be very good, as suggested. It also went well with the White Zin we were serving.

Delicious with red wine, from mild to full-bodied. We like the sesame coating but wish the seeds were roasted or stronger in flavor. It is a good cheese to serve on a cheese tray because it looks interesting yet the flavors are simple enough for guests who are new to goat cheese. The subtle flavors in this cheese will win them over.
