Cheese is a product of its environment. In New Zealand, rich fertile valleys watered by pure mountain streams and soft, gentle rain create endless grazing pastures of lush, sweet green grass year round. This, plus a cool temperate climate ideal for the slow natural aging of the finest cheddar cheese, gives Mainland its unique and distinctive flavor.

Hand selected by Mainland's Cheese Masters and set aside to age naturally for 24 months, this cheddar has strong piquant flavors with a hint of cream in the finish and a crumbly texture which can only be achieved with the finest of cheddars. Pair it with a dark ale, Port or red wine, served on the deck in the summer or in front of the fire when it's cold outside.

I really did not like this cheese. It was bitter to me. It did not last very long in my refrigerator either. The only way I could eat this cheese was on a sandwich. It was not good enough for me to put on crackers, which is one of my favourite things to do with cheese.

This is the best cheddar I've had in my adult life. It reminds me of the cheddar of my childhood, which my mother purchased, cut in triangular wedges from the huge round under the glass dome, in the little market in my small hometown in Pennsylvania. Anyone who complains about crumbling in a sharp cheddar has no experience with the best aged cheddars. And there is NO "blue cheese" taste in this truly perfect mature cheddar. I will purchase this regularly as I do my favorite blue cheese, "Maytag."

I like cheddar cheese a lot and this and the Vermont cheddar you can get at [...]are the best of the lot. I would say this is the better than Vermont for most uses because it is not as salty as Vermont cheddar but you can't beat either type cheddar grilled under a broiler.
