Almost extinct, only two small dairies in Norway still make Nokkelost. This Norwegian specialty cheese, made from partially skimmed cow's milk, is flavored with cumin seeds and cloves. These herbal additions give Nokkelost a warm, spicy taste. Similar in concept to Dutch Leyden, although with a springier texture, Nokkelost is a festive cheese that is always a hit at parties. It partners very well with beer and wine, especially when served with dark breads, such as pumpernickel.

I used to buy this, cut fresh off the red wrappered "log". Usually 2 lbs or so. Growing up in Brooklyn, we had a bakery delivery truck, from a company called Larsen. They had a heavy, allmost sourdough type bread, called Gristle Bread, which I would butter and layer on the cheese. My mother would also add a layer of Ski Queen Gejtost. It is also good on Vasa Bread (flat bread ). When the FDA banned this cheese several years ago, due to sulphites, we tried an american version from Washington State. Was real nasty stuff.

This was on the table everyday at my Norwegian grandparents house in Brooklyn, NY. One smell and taste of this cheese brings back all my wonderful thoughts of them. I can't get enough.

I grew up in the mid-1940s to the late 1950s with this wonderful cheese as a staple always on my Norwegian-born grandmother's smorgesbord table. It was always readily available at a local deli in northern New Jersey back then. The aroma and taste are exquisite! Very hard to find now and few places offer it online.

This is my favorite cheese. I first tasted it when I was going to school in Minneapolis in the 60's. It is hard to find and I hope that it never becomes extinct. When I am able to get it I make it last a long time as I know it will be a long time before I will be able to obtain it again...

I first had Nokkelost in the late 1970's and fell in love with the odd combination of Cumin and Cloves in a cheese.
Similar in taste to Leyden, with a texture like Valskaas but the nuance of Cloves adds a taste that is indescribable.
It will grow on you after your initial taste, you seem to be drawn back to taste it again and again and before long fall in love a great tasting cheese.
