This Norwegian cheese is made from a mixture of cow and goat's milk. It has an unusual, sweet flavor due to the way in which it is processed. The milk is cooked until the sugars in it have caramelized, giving the cheese its distinctive brown color and sweet flavor. The milk is then curded and pressed. The cheese became popular as a skiers' snack and thus the label on the whole cheese is emblazoned with the words “Ski Queen”. It is widely popular among Scandinavians, and children in the United States are drawn to its sweet flavor.

This cheese has been available in small packages of less than 8 oz in my local grocery store for at least 30 years. It is wonderful on hot buttered toast. Use a cheese plane to make each slice as thin as possible.

The Gjetost cheese was all that I expected it to be and I had not tasted it for many, many years. I grew up with a Norwegian boy as a young playmate and had this cheese on crackers every day as an afternoon snack at his house. I could never find it anywhere in Northwest Florida. Tasting this unique and wonderful cheese again brought back many pleasant memories.

At Christmas time as kids when my mom would bring out this cheese, my siblings and I would run and hide. It's an acquired taste, I think. I don't know many kids who like it. I love it now. I have a great recipe called Smoked Chicken and Goat Cheese Pasta with pine nuts. I'll ask if I can post it in the recipe section on this website. It's the best pasta dish I have ever eaten. This cheese is very sweet...a little goes a long ways.
