I was excited to try a new swiss. It looked beautiful and looked perfectly ripe for a swiss - just a hint of buttery yellow but no hard spots. It smelled quite strong out of the wrapper, so that was a surprise. It tasted as though it had cured in a moldy basement - it wasn't moldy. It just smelled and tasted of it. If you love strong cheese, give it a try. It was the strongest swiss I've ever encountered.
