Comments about Lubelski:
You would have to travel to Poland and take a sip of the milk that is used to make this cheese to know the secret behind the flavor. No wonder it tastes so great! It's from the soil through the grass and herbs that the cows consume, it's all there!Simple yet complex. No wonder Poles are so crazy about their food! No matter how crazy they are about it, they would never, as Gosia already mentioned, try to make cheese cake from this type of cheese. Sounds like a bad Polish joke to me.

LOVED THE FLAVOR (MILD) AND TEXTURE. AS SOMEONE WHO LIKES TO TRY ALL THE DIFFERENT FOODS OF THE WORLD, THIS IS ONE CHEESE I WILL PURCHASE AGAIN.

The cheese itself is great but I guess the person writing about the Polish cuisine has no idea what it is, not to mention basic information about Poland that you include with numerous mistakes here. I happen to be Polish and we never, NEVER !!! use this kind of cheese to make "sernik" or cheese cake. The proper cheese type for our cheese cake is something that resembles the cottage cheese or the German quark which is white and milky and sweet. Lubelski and other similar kinds of cheese can be used as a pizza topping or best served on top of a sandwich with vegetables or, if you are more adventurous - with some types of fruit or jam. It is also great with cranberry sauce.
