Amarelo is an unpasteurized sheep's milk cheese from the Beira Baixa region, located between Portugal's central mountains and the Spanish border. The flavor of this artisan cheese reflects its homeland: rugged and rustic with a hint Portugal's sea salt. Not a cheese for the faint of heart, Amarelo has a distinctive aroma and a forceful, buttery flavor. Along with its piquancy, the cheese parts with a pleasant sensation. Grassy overtones of sheep's milk develop as they linger, leaving you with the desire to take another bite.

Great Cheese but a bit gamey

This is a good cheese but is a bit too "gamey" for me. I consume only goat and sheep cheese, so I am used to their slightly "gamey" or strong taste. However, this one is a little more than what I like.

Portugal cheeses never fail to impress with their flavor & texture and this cheese was no exception. Served after dinner, with plump raisins, dried pears, almonds and wine.

A truly magnificent cheese!!!!! Portuguese cheeses are known for their intense flavor and centuries of knowledge in cheese making. You can actually taste it on every bite.
If you visit the region where this cheese is made, every time you get in a house as a guest they will serve you wine, cheese and corn bread... actually most cheeses of this type are served and eat this way, with wine and corn bread or a type of bread from the respective region.
Advice: A glass of good wine, a piece of good bread, and cheese after a dinner meal or before. Enjoy it.
Warning if you are not ready to eat cheeses with strong flavor, stay away from this type of cheese. Start with milder ones and then slowly increase to stronger.
