This wonderful cheese comes to us from the volcanic island of the same name in Portugal's Azores archipelago. Littered with giant craters, the island is also home to vast, lush, natural green pastures. When colonized by the Flemish in the 15th Century, cheese production was introduced to the island, with cows brought over from the mainland. Still made in the traditional farmhouse way, this cheddary cheese is made from unpasteurized cow's milk and aged for over 120 days. Its hard, inedible, natural rind gives way to a lighter colored interior with tiny, irregular holes. Sao Jorge is incredibly versatile, lending its tangy, slightly peppery undertones well to sauces and being equally delicious served cubed into a salad or chunked and eaten with a crusty baguette.

Sao Jorge is a Cheddar-type with a twist. There's a distinct undertone of Smithfield ham! Strange, but makes it absolutely distinctive - not to mention delicious.

This cheese was OK. It was flavorful but it was YELLOW not WHITE as it was advertised. It did didn't have large holes. It tastes likes a light chedder & for that, it makes a heck of an expensive (cheddar tastin) cheese!
I would not recoomend only for the price....

Garlic cheese bread

4 slices of Portuguese bread or Italian
1 stick of butter
6 cloves of garlic minced
2 cups of Sao Jorge cheese grated

melt butter with minced garlic
with a brush,brush the melted butter and garlic into bread, and spread cheese on top.
Broil in the oven until light golden and serve with pasta.
Maravilhoso.

This is a staple of our annual St. George's Day celebration - our guests are always impressed. The flavor is subtle but very unique. Perfect for a party.
