Kebbuck is the old Scottish word for cheese. Maisie's Kebbuck is a rare, handmade cheese named after the cheesemaker's mother-in-law. It is a semi-soft cow's milk cheese that is made using a traditional 18th century recipe. It is only made on one farm at Walston near Carnwath, high in the hills of the Upper Clyde. Made from unpastuerized cow's milk using vegetarian rennet, this pale yellow, soft-ripened cheese has a natural rind and a wonderful full flavor that is reminiscent of Lancashire, but creamier. A true gem, Maisie's Kebbuck is a new favorite at igourmet headquarters.

This creamy, ripened cheese is not for everyone. It is pungent and strong tasting. But take a chunk of it, spread it on some good sourdough bread and add a neat single malt scotch and you have the makings of a great end of the day repast.
