Nowadays, the Cheese Masters at San Ignacio in Santa Fe, Argentina make blue cheese with the same passion and expertise as those before them. Made from rich, creamy pasteurized cow's milk, the blue mold spores which give this cheese its characteristic color and flavor are imported from France. San Ignacio Blue has a soft, creamy and crumbling texture that displays a balanced contrast between its white color and the greenish blue veins. Excellent crumbled over salads or in numerous recipes, San Ignacio Blue is also a delicious snacking cheese when served with fruit and crusty French bread.

This is not for everyone. Half of my family really liked it, the other half found it too tangy for them. It was delicious in salad and I liked it with Bosc pear slices. If you like sharper blue cheeses, this one's for you.

As Jenny mentioned previously, you wonder about the color and condition of this cheese when you first receive it. Unwrap it and let it breathe for a while and it will clear up. The taste is wonderful. It has a the flavor that you would expect any blue cheese to have. It also has creamy yet crumbly texture. Even though it is crumbly it still isn't dry though. Once again great blue cheese!!!

Blue green veining with a creamy touch. Wonderful as a stand alone cheese...as long as you like flavor, or; on a salad with nice big chunks. But my favorite is a nice crumble/slice on a thick burger! Uhm. Uhm. Uhmmm!

I was extremely surprised to find a delightful Argentian Blue!

It's quite delicate and would convert even those who aren't Blue Cheese lovers.

It ranks right up there with Maytag and Paladin.

A creamy texture that will crumble if desired but not dry like some blue cheese products. At first you wonder about its dull green color instead of typical blue veins but once exposed to sire it brightens up and there will be no regret at all once you taste it. Excellent cheese. Excellent price. South American cheeses are the bargains of the times, many times as good as European at fraction of price.
