I purchased this cheese as a substitute for the Reggianito that was out of stock. While I can't compare it to that cheese, I can say that if you love a sharp, salty, grainy Parmesan on your pasta, this will not be an adequate substitute. This cheese is much smoother and milder with no crystals. It is definitely flavorful and enjoyable, but does not belong belong in the same category as a good Parmesano.

This cheese has been a family favorite for generations. It has a sharp flavorful taste. If you like Romano, Parmasean or Provolone, you'll love this cheese. I use it in antipasto salads, grated on pasta, shredded in spinich artichoke dip or just leave it on the cutting board and savor paper thin slices that melt in your mouth.
