Made by La Carlota del Monte, located in a farming community outside of Buenos Aires, this cheese is made only from pure sheep's milk originating from their own production. La Carlota del Monte only has Milchschaf sheep, a breed known for its production of rich milk. As a result, they produce a cheese similar in style to a Spanish Manchego.

Malbec is a traditional "Bordeaux varietal" originating in the Southwest of France. The red variety has experienced the best adaption to Argentinian soil, providing exceptional wines; in fact, some of the best Malbec specimens in the world. The grape is a midsummer ripener, very deep in color and has a plum-like flavor component to it. We have often enjoyed La Capilla paired with a good Malbec. Now, with its Malbec wine rind, two great flavors are combined, adding complexity to an already sophisticated cheese.

  • Made from pasteurized sheep's milk. Aged for three months.
