Malagon with Rosemary is a Spanish cheese made in the style of the Dénomination de Origin (D.O.) cheese, Manchego. It is produced in the La Mancha in Central Spain from 100% sheep's milk, just as Manchego and many other Spanish cheeses are. Sheep thrive on the dry, rocky terrain of Spain by grazing on the abundance of wild herbs that cover the countryside. Malagon with Rosemary combines one of the most prevalent herbs of the Spanish countryside, rosemary, with rich sheep's milk cheese. After a period of aging, the rosemary that is pressed into the rind of the cheese imparts a wonderful flavor into the cheese. The herbs also lend the wheels a rustic, natural appearance.

I thought the cheese was a bit bland and dry. I enjoy a more flavorful cheese. I love rosemary and that helped the cheese's flavor a bit, but not enough for me to purchase again.

This is the most delicious cheese I have ever had (and I have tasted many from many countries). The rosemary on the outside of the cheese infuses an incredible flavor to the cheese. It is perfect as an hors d'oeuvre before dinner or after dinner (or just as a snack)--goes great with fruit and wine. I always try to order this one whenever it is in stock.

This is one of my favorite cheeses. I love good things, I love good cheese. I can tell the difference between a lesser and a nicer wine. I didn't know if it was just that I liked the interplay of the rosemary and the firm rich flavorful cheese, but I brought this to share at lunch and the response was the other cheeses(all nice cheeses) were good but this one "redefines what cheese is" followed by "can I bring some home for my wife and where can I get this".

This is not a cheese to serve to a large gathering or where the array of other food choices is expansive.

This is a cheese to share with an intimate group. It should be the centerpiece. There is a strong sense of rosemary that will draw immediate responses (it will either be thumbs up or thumbs down; there won't be any in between). So, the host needs to have a blander cheese on hand for the thumbs down guest(s). Because this cheese is so full-bodied, it needs a plain-tasting cracker so as not to interfere with the cheese's flavor.
