A genuine cheese from the La Mancha region, this artisan Manchego originates on small Spanish hillsides where La Mancha sheep flocks graze. The small-scale, artisan production of this Manchego by Dehesa de los Llanos yields an exquisite cheese that is hand-formed, wrapped, and salted over a 24 hour period. Dry cured for one year in an eighteenth century cave, this Manchego has a robust flavor reminiscent of the Mancha countryside. Enjoy it as the locals do - served before the meal, topped with a spot of membrillo (Spanish quince paste). Also lovely when dipped in honey.

We had Manchego in Valencia and fell in love. This cheese is just as we remembered it. Best in thin small slices with fresh fruit, baquette slices, honey or dark Spanish chocolate. Great cheese to nibble. Ole!

Excellent Manchego ! This is soooo much better that what you can pick up in dairy case. The aging process really gives this cheese a wonderful flavor. I'd suggest this, along with the quince paste, as part of any cheese presentation.

I found this cheese to be extraordinarily dry...much dryer than any Manchego that I have ever tried. It does not work for me in a sandwich and does not melt well on foods. I found it to be more reminiscent of an Italian hard cheese such as Romano. It might be good grated on pasta. Other than as an hors d'oeuvre, I see little use for this cheese.

This manchego is the best we've had. It has the flavor profile you'd expect from a nice Manchego, and adds a complexity that is somewhat grassy - as if you can taste the grass the cows ate!... VERY nice!
