Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry; unfriendly to cows but suitable for raising goats and sheep. The abundance of wild herbs on Central Spain's grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant ,while its texture is firm but not dry. Manchego can be recognized by the zigzag pattern etched into its rind. This is created by the rippled surface of the press used in the manufacture of the cheese. Underneath the inedible rind, the interior is ivory colored with few small holes. Taste Manchego for the first time and you will be surprised at how long the wonderful flavor lingers on your palate. It is an experience you will be drawn back to again and again.

This is one of my favorite cheeses in the world! Even my 15 year old son, whose taste in cheese ranges from American to cheddar, loves this Manchego! I made him a sandwich for lunch today with a slice of it, at his request! I just enjoy nibbling on Manchego by itself, or with a nice Pinot Noir. Mmmmmmm!

I was somewhat apprehensive about a sheep's milk cheese, never having tried one, but this was a revelation. I expected some sort of twangy after taste, but this was as smooth and as flavorful as could be. I had it with some Spanish chorizo [from this site], and it was just going to be an appetizer. It wound up being the entire meal, with some crusty bread and a good Texas red wine. Outstanding product.

This was great in a quiche. It is very versatile and would be enjoyable in a lot of fashions, i.e., with crackers, by itself, with fruit, however you usually like your cheese.
You would never guess this was sheep cheese. Also a great bargain.
