Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry; unfriendly to cows but suitable for raising goats and sheep. The abundance of wild herbs on Central Spain's grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant ,while its texture is firm but not dry. Manchego can be recognized by the zigzag pattern etched into its rind. This is created by the rippled surface of the press used in the manufacture of the cheese. Underneath the inedible rind, the interior is ivory colored with few small holes. Taste Manchego for the first time and you will be surprised at how long the wonderful flavor lingers on your palate. It is an experience you will be drawn back to again and again.

This cheese was exceptional. The taste was perfect. I was surpised it was Sheep's cheese. it's not the type of cheese you would melt. I broke off pieces & ate it plain, placed it on salads, w/fruit& cracker plate.

I liked it; tried several times and quality is somewhat inconsistent - i.gourmet outperformed a few other places i bought from.

My friend is a widow and many times, doesn't cook for just herself. She loves to "knosh". She is particularly fond of Manchego. Everytime I talk to her on the phone, she tells me how much she has left and how much she is enjoying it. I had a similar experience with this cheese a couple of years ago as part of a combination gift. My cousin's friends who travel to Spain often commented that they never had Manchego as good as yours except in Spain.

This cheese is amazing with fruit, we tried fresh apples, fresh figs and fresh apricots with it. It also goes well on sandwiches with its rich flavor it adds a new dimension to turkey, roast beef or lamb on sourdough.

I bought Manchego from other retailers but this cheese was by far the freshest. I grew up eating this cheese and it tasted as good as I remembered. I shared it with my daughters and they didn't leave me with much.

This cheese is one of the better ones that I have purchased. I originally intended only to purchase the Serrano Ham but then saw this product and glad I added to my cart. Fantastic tasting cheese. Very creamy and not overpowering in taste. I would buy again.

I just keep coming back to Manchego. The flavor can't be beat. It's so great for snacking, I hate to use any up for cooking. This wonderful cheese bears NO resemblance to the pale shadow you can buy in some groceries. Buy it. Eat it.
