Campobello is a Manchego-style cheese made from a mixture of sheep, goat, and cow’s milk. It has a firm, velvety texture and a slightly sweet, creamy taste that is milder than the all sheep’s milk Manchego but still reveals the herbs and grasses on which the cows, sheep, and goats graze. This cheese is produced in La Mancha, but the milk used to make it comes from across Spain. The sheep are locals and wander the dry fields of Spain’s central plateau. The cows are raised in the north of Spain, where the climate and the vegetation are more generous. Goats can survive nearly anywhere and are typically raised in the south of Spain.

I took a few bites and was certain that I did not want to eat any more. I threw it away. Had a good texture, but in my opinion a very unpleasant aftertaste. I thought it tasted like unwanted chemicals were in the cheese (even though I'm sure that was not the case).

The cheese reminds me of a Manchego-light. It still has that little crunch when you bite into it as Manchego, but the flavor isn't as "in your face." The smooth mouth-feel is luxurious!
This one is a new favorite at my house.

This is a very balanced, flavorful cheese which will be enjoyed by anybody who appreciates sheep, goat or strong cow cheeses. Just a little grated over a rice dish, toast or green salad goes a long way but it really is best eaten by itself as a thin, tiny slice at room temperature.

Very delicious, similar to Manchego. We have only had it on crackers but I bet it would melt wonderfully.
