This goat's milk cheese was once produced solely in the Garrotxa area of Catalonia. This is the area of Pyrenees region of Spain that is farthest to the East, lying right on the shores of the Mediterranean Sea. Garrotxa has a white interior, with a very creamy texture that is surrounded by a natural mold rind. It has an unusual but mild flavor with a light acidity and a hint of hazelnuts. It melts very smoothly, but we like to eat it out of hand. It is sure to become a new Spanish favorite.

This cheese is a real treat. I tried it first at a Spanish tapas restaurant, had sent it as gifts, but hadn't ordered any for myself until this past week and boy had I missed it! I haven't tried melting it or adding to salads, etc., yet because it's so fine on it's own. It starts out with what you'd expect from a goat's cheese; that sort of fragrant, distinctive taste that starts in your nose,but stays in the rind, and then develops into this rich flavor that crescendos in your mouth and then mellows with the finish. Perfect. Never before have I tasted a cheese that made me realize I was drinking the wrong wine with it. Try it on it's own, perhaps with one of the white wines suggested on the site, or if you're serving reds, enjoy with a nice Malbec or Pinot Noir to balance the bite (Cab/Merlot blend not recommended - inferior to this cheese). This is my first review because I'd seen that none had rated it yet and I had to share. Try this cheese - you'll want to buy the whole form!
