In the southeast corner of the Iberian Peninsula lies the breathtaking land of Murcia. A former Moorish kingdom, it is hot and sunny with a rugged terrain (with the exception of the coast). Thanks to the irrigation systems built by the Moors and several fertile valleys, Murcia is known as “Huerta de Europa” (Market Garden of Europe). Large crops of citrus and other fruits, vegetables, almonds, olives, grains, and grapes are grown here.

Murcia is also known for its wonderful goat cheeses. La Yerbera takes advantage of two of its flavorful commodities and combines them to form a uniquely flavored cheese. La Yerbera is made from the milk of Murciano-Granadina goats near the stunning lagoon of Mar Menor on the Costa Calida. The cheese is aged for 25-45 days and the rind is coated in chopped almonds and extra virgin olive oil. The result is a compact cheese, creamy on the pallet, imparting the subtle flavor of almonds throughout the cheese. The lingering sharpness of a classic Murcian goat cheese makes this a winner on any cheese board.

Comments about La Yerbera:

While subtle, the chopped nuts on the rind impart an excellent flavor to the cheese, which also has the tanginess of goat cheese. The cheese is quite hard, so shaving off thin slices works much better than trying to slice off pieces. The flavor is quite full even with the thin shavings, enough that it is a presence even in sandwiches with strongly-flavored meats, mustards, and toppings.
