Subtle hints of caramel and grass burst through the buttery nature of the cheese, making it ideal to serve with ham, fruit and some crusty bread. The potency of this mature sheep's milk cheese counterbalances well with the Crianza red from Ribera del Duero.

A very nice cheese.Slightly flaky in texture.Pleasent,slightly sweet taste-not at all sheepy or gamey.It was a bit salty.The more I eat this cheese the more I like it!Try it if you've never had sheeps-milk cheese.It seems to dry out quickly,so keep it well covered in the fridge and when bringing to room temp(tastes best this way!)
