In the village of Vilassar de Dalt near Barcelona, Josep Cuixart has been making artisanal cheeses since 1980. Mr. Cuixart uses same day milk from his own Murcia and Grenadine goats and from neighboring herds that feed from grasses filled with herbs like rosemary and thyme. The name Nevat (the Catalan word for “snow”) refers to its downy white mold (from penicillium candidium). The curds are drained in a knotted cheesecloth bag. When firm, the bags are opened and its unique shape emerges. It resembles an extremely plump Brie, sloping up to a peak in the middle, like a snow covered mountain. The interior is creamy at the edges, becoming firmer at the center. Nevat has a full, rich, and buttery flavor with herbal notes and a sweet, mildly “goaty” tang. This stunning bloomy rind cheese is pretty amazing. Simply serve with fresh crusty bread, perhaps some fresh fruit, and a bottle of chilled Cava from Catalonia.

My family still lives in Italy and I love Italian cheeses, yet the Spanish-made Nevat has become my favorite cheese. Firm on the outside and creamier in the middle it is a very special cheese. You will be so glad you tried it.
