Queso de Cati Cooperativa Valencia is based in the interior of the coastal province of Castellon. This province is largely known for its pristine Mediterranean coast, but it is also the 2nd most mountainous province in Spain. It is in this area that the small medieval town of Cati lies. Cati Cooperativa makes an incredible goat's milk cheese called Pañoleta. The cooperative collects goat and sheep's milk from local farmers. The milk is brought to the cooperative and is made in the traditional artisanal way by their master cheese maker. Pañoleta means “handkerchief” in Spanish. They fold the curd in the handkerchief and tie the four corners together in the center of the cheese, hence its unique shape. The rustic exterior of this small hand-made wheel is coated with a brown mold. This ugly duckling on the outside has a stunning, silky white semi-hard interior. This is a delicate and elegant goat cheese to be savored with nothing but a fine glass of wine.
  • In 2005, the Spanish Ministry of Agriculture awarded 2 Valencian cheeses, among 13, to acknowledge Spanish native cheeses, many only known in their zone of production. Cati Coop. was awarded with Best Cheese of Spain de Ecological Producción.

At first bite I was in heaven. The taste reminded me of lamb chops, not in a gamey way, but in, let me take my time and savor this experience. Panoleta is pungent at the beginning but ends with a smooth finish. I am sure it would melt well, or I can see using it on Italian toast but honestly, to me this is an eating/savoring type of cheese. Bold and to be taken very seriously on its own.

Loved this cheese. I'm a fan of goats milk cheeses, and this one lives up to its type.

I enjoyed this cheese served room temperature on crackers, and later enjoyed it again melted between two slices of bread. Yum!
