This tradition led to the creation of El Ventero, which is made from goat's milk blended with milk taken from sheep and cows. This youthful, delicate cheese is stark white, soft and mild. A little easier to slice, goes great on gourmet sandwiches, no hint of the goat cheese mixed in either, a great flavor, very versatile too.
