I have a Swedish nephew who brings back this cheese for me at Christmastime. I am so glad I found this on your website! It is the most delicious cheese and so very versatile. It can be eaten anytime and will complement any food. I have found that it's best when eaten at room temperature. It brings out all of the wonderful flavors of the cheese. Now I don't have to wait till December to enjoy it - I can have it all year round!

This cheese is great with a garlic flavored cracker as a snack. I have used this cheese with scrambled eggs, salads, and sandwiches. The most unexpected way to try this cheese is on a dessert tray with fruit and Ginger Snap cookies. The cookies and cheese go well together. I also found this cheese to freeze well. I wrap a piece of cheese in a damp paper towel and place in a freezer bag. Place in freezer. Thaw on counter when needed. It takes about 4 hours to thaw out and once thawed, it tastes great.

I took this to a friend's house to use as an appetizer before dinner and four people pretty much devoured it! It is really delicious. It's a mild cheese and it kept its freshness (I had to reorder, as the first wedge was gone). I also think it would melt nicely in sauces. Great in scrambled eggs, too.
