Located in:Cheese, Sweden
Västerbotten is the traditional Swedish celebration cheese. To many Swedes, it is considered the "emperor of cheeses," either because of its heft (it is made in 40 pound wheels) or its full flavor. Produced in Northern Sweden, Vasterbotten is aged for over 11 months and thus is dry, reminiscent of a young Parmigiano Reggiano or an aged Cheddar. Its flavor is rich and full-bodied with a tangy, bittersweet bite. Serve it in the Swedish tradition with some ginger snaps and a cup of hot glogg.
  • Made from pasteurized cow's milk.
  • We cut and wrap this item by the 1/2 pound.

Comments about Västerbotten:

I am from Vasterbotten in Northern Sweden and has lived in the US for 20 years.
Here is a suggestion for the serious gourmet.
Plead, beg, steal, paddle your way up to Alaska, ask my father - just get ahold of some good moose meat, then make just about any Italian pasta dish on the moose meat and The Vasterbotten cheese.
Out of this world!!
Buy some cloudenberry jam, heat it up and pour over vanilla icecream for dessert

Comments about Västerbotten:

A perfect balance of texture, richness, and smoothness. Softer and more delicate than asiago or manchego, more flavor than fontina, less pungent than guda. I am amazed it isn't a staple of every cheese counter.
