This unique cheese, sometimes called Glarner Schabzieger, has a mysterious green hue. This color is due the addition of clover. Not only does this herb add an interesting tint, it also gives the cheese a unique sharpness. Sap Sago is made to be a grating cheese and is not commonly eaten straight. It is excellent grated over steamed vegetables; especially cauliflower, broccoli or potatoes. In Switzerland, this conical cheese is often grated and blended with butter to create a piquant spread for bread or crackers.

AS A 50+ PERSON MY DAD USED TO LOVE THIS CHEESE AS I NOW DO. WE GRATED IT FINE ON A GRATER, ADD SOFTENED WHIPPED SWEET BUTTER AND SPREAD ON RYE BREAD.....I CAN TASTE IT NOW--HAVEN'T EATEN IOT IN YEARS AS I COULDN'T FIND IT ANYWHERE

My family and guests rave when I grate this cheese over salad. Adds a "nutty" flavor - seems rich but is not. Very low in calories. Especially good when served with Italian or oil and vinegar salad dressing.

Sap Sago lends itself for so many different ways. Just nibbleing on it as it, or grating it over hot vegetables like Tomatos. zucini, onions, squash. It makes very tasty canapees, and let them selves be decorated real easy. I love it with new hot potatos. over backed potatos, and mixed in to make twice baked potatos. Its great in casserols on top grated over with emmentaler or Gruyer. It is great for anything where you want to add a little extra spark and taste to it. Its natural sharpmess and herbal flavors lend themselves well for so msny items. Enjoy as I am, its Swiss!!!

I'm originally from Switzerland, and know tons of cheeses from there. It's difficult to find cheeses of this quality anywhere else than on igourmet.com, while living in the United States. Sap Sago can be used in many different ways, and it lasts longer than you may think, since just a little is usually enough.

A very hard cheese only good for grating. Grate about 1/3 of a cone, mix with 8 Oz. of cream cheese and a little cream if you want a looser consistency. Makes and excellent spread on crackers as a snack or an appetizer. Liked by most people. Questioned as to what it is. Not easily found in commercial grocery stores. Been making and eating this spread since I was a kid some 50 years ago!

I was raised with this cheese but we always joked it smelled like fertilizer. It is very sharp and bites and the smell puts off a lot of people but get over it and try it! The taste will win you over and if that doesn't the fact it has NO fat and hardly ANY calories will! Grind in a blender and put on buttered bread or mix with fat-free crean cheese for a low-cal spread.
