In the warm season, the pastures in the heart of the Fribourg Pre-Alps come to life with an almost endless variety of delicately scented flora. In this idyllic setting, you might find a chalet perched precariously on a slope, or an armailli (cowherd) grazing his herd in the fields of this flora. Vacherin Fribourgeois is made in these hills. It has a firm texture and an ivory to yellow colored interior. The flavor of Fribourgeois is fruity and aromatic with a slight bitterness. The cheese is ideal for making fondue but is also delightful when served as part of a cheese board or as a dessert cheese.

I had the pleasure of living in Fribourg for a year during college, and haven't had REAL fondue since I left 16 years ago. I recently treated myself to a real Swiss terra cotta fundue pot, but have been unable to find the vacherin anywhere. . .until I discovered [...]. As soon as I slit open the package, I knew I had the real deal - and I had forgotten how stinky this cheese is! I made fondue fribourgoise that evening, and it was perfect and delicious!
