Until the 19th Century this perennial favorite was known as Valais. Taking its modern name from the French verb racler (to scrape), Raclette is now one of the most popular mountain cheeses worldwide. Made from whole, unpasteurized cow's milk, this raclette is typically aged three to four months. Smoother than gruyere, Raclette has a creamy and supple texture with fruity undertones that intensify when melted. A little firmer than its French counterpart, our Swiss Raclette is great served with Bunderfleisch or cured ham. Traditionally served with kirsch or beer.

I have loved raclette since my first visit to France. I love to bake it in a small cast iron pan until it gets brown around the edges. Just grind some fresh black pepper over the top and sit down with the cheese, a baguette, and a beer a drift off to Shangri-La

The Swiss raclette we received was too runny when melted on a raclette grill, which is more characteristic of the less expensive French raclette. Swiss raclette sold in Europe (Switzerland and Germany) is a lot firmer.[...].Since there seems to be no alternative for finding Swiss raclette in the U.S., I would still recommend this to a friend, with a reservation that they should expect the quality of French raclette.

This Raclette cheese is what you get in Switzerland. We used to live next to the French and Swiss border and this definitely one of the bests I've ever tried. It's expensive, but if you don't care about the money, this Raclette cheese is better than the French one, although the French is recommended by me as well (for people with smaller wallets). Drinks with it are either Whitewine or Tea, no sparkling carbonated drinks! Eat Garlic, Onions, cutted Pickles, Peperoni, Bacon, Mushrooms, Spices like Paprika, Pepper, Salt etc. with it. Boil potatoes and poor the cheese over the potatoes. You should use the appropriate Raclette stove and plan enough time - no American style in and out fastfood ;-).

Raclette is a typical winter dish for our family. We love eating it on a cold, snowy winter's night, sharing with friends and family. Add some filet mignon, thinly sliced, or salami slices, cook them on a raclette grill together with new potatoes, and serve with pickles and other goodies to "cut the fat". Don't forget a cold schnapps for in between servings to "burn a hole" in your stomach so you can fit another serving of this delicious cheese!

I grew up in Switzerland and there is no better way (other than fondue, of course!) to have a great get-together with friends on a cold winter evening. Don't let the smell turn you off! Get a raclette grill, a couple of pounds of raclette cheese, small round boiled potatoes, a jar of French cornichons, French baguette and you've got all the ingredients for a congenial evening. Drink only white wine or hot tea with this Swiss specialty to avoid "cheese balls" forming in your stomach!

One of my favorite meals comes from Geneva where I had the pleasure of living. The menu consists of Raclett, melted to perfection in a Raclette burner, and boiled new potatoes with parsley butter, accomanied with baby dills and pickeled onions. The meal is completed with a good dry white wine and a tart and/or fruits and berries for dessert. No other Cheeses will do - the taste and melting properties of Swiss Raclette is unique. [...]

MY DAUGHTER IS SPENDING A SEMESTER IN SWITZERLAND. SHE HIGHLY SUGGESTED I PURCHASE THIS CHEESE. ONCE I OPENED THE PKG, A DISGUSTING SMELL FILLED THE ROOM. I TRIED NOT TO FOCUS ON THE UNPLEASANT ODOR. PER HER SUGGESTION, I MELTED IT OVER A FRESH SLICE OF ARTISAN BREAD. IT WAS WONDERFUL!I EMAILED HER MY RESULTS. SHE FORGOT TO WARN ME ABOUT THE AROMA.
