The literal translation of the French words "Tete de Moine" is "Monk's Head". Although this fine Swiss product was first created by monks, it is now produced by the lay community. Tete de Moine, made in the Swiss Alps from rich unpasteurized cows' milk, is a sharp cheese with a full, nutty flavor. Its intense flavor is even more pronounced when compared to other cheeses from Switzerland, like Gruyere and Emmental. A true specialty item, Tete de Moine deserves to be regarded as one of the world's great cheeses.

The full flavor of Tete de Moine is only revealed when the cheese is scraped or peeled in thin ruffles or rosettes using a girolle. The girolle consists of a wooden stand with a vertical rod, upon which a blade is mounted such that it can be cranked in order to scrape the top of the Tete de Moine cheese. A wonderful gift for anyone who enjoys fine Switzerland cheese. This set also makes an impressive display at a small party.

I gave this set as a gift to a friend for Xmas. He and his guests loved using the girolle to make the pretty shavings that went so well on crackers. It is a very interactive buffet item and a good conversation piece.
