This cheese comes to us from Emmi, master cheesemakers since 1782. They buy full 200 pound of Gruyere from the farming regions in the Canton of Fribourg, then age them in underground sandstone caves in their facility near Lucerne. Made from rich, unpasteurized, Alpine cow's milk, this Grand Gruyere Reserve has been aged for at least one year, compared with the average four to six months. A rustic, somewhat oily rind gives way to firm, smooth textured cheese which is slightly aromatic with a robust, assertive flavor. Wonderful served unadorned with some dark bread and figs, this is also a great melting cheese, and one that lends itself well to gratins, fondues and soups.

This brings back fond memories of when I lived in the Gruyere area of Switzerland. They keep the best for themselves, knowing they appreciate it more than most North Americans but this rivals the best chalet made I have had the pleasure of eating. Spectacular in fondue with the Swiss Vacherin (also found here) as it is classically made in haute Gruyere.

I use Gruyere melted on toast, in sandwiches, or just like that. This cave aged one tastes much better than the regular Gruyere. I also love Fondue's which is a famous Swiss food, made from melted Gruyere, Appenzeller and Emmentaler.

Together with the Appenzeller, the Gruyere also is one of Switzerland's most favorite, traditional and famous cheeses. Gruyere is good on anything. I would describe it as Switzerland's answer to America's cheddar cheese. Of course with a lot more refined and delicate taste and way more healthier! Gruyere is absolutely the best on anything, goes well into Fondue together with Emmentaler, Appenzeller and Tilsiter. It is one of the top main cheeses in Switzerland.

I've had some wonderful Gruyere from around the world over the years but this is by far the most flavorful and distinctive. This was my first cave aged cheese and I agree with article I read about the distinctive quality of this process. I now come home to this cheese and a glass of wine to really unwind.

This cheese tastes great and is a good value for the money. Plan to eat it all over a period of a week because once you open it the flavor will start to soften. It shouldn't take long to eat it though because it does taste very good.
