Le Marechal is a raw cow's milk cheese produced in small batches in the town of Corcelles-aux-Payernes. Aged for five months. At the beginning of the third month, the cheese is rubbed with Herbes de Provence (a blend of thyme, oregano and other country herbs) giving it a beautiful appearance and a wickedly spicy flavor. We were surprised by how strongly the herb flavor penetrates the rind, imparting their rustic flavor on the cheese. Reminiscent of Gruyere and Tete de Moine, Le Marechal is a new cheese that belongs among the classics.

This is like gruyere the way it used to be. Big bold spicy flavor, which mellows a little when melted. Discard rind if too stinky for you. We've had it with whites and reds and enjoyed both, but especially viognier and merlot. unbeatable price

strong and flavorful. don't waste this on timid guests. my wife and I devour this after dinner with a nice cotes du rhone.

Le me first say that I love a good stinky cheese. Layers of both smell and flavor are one thing, but Le Mar?chal was too much. The body of the cheese itself was incredibly rich and creamy, but as advertised it took on the flavor of the rind and therein was the problem. Those in attendance at the gathering where I served Le Mar?chal agreed that the rind was indescribably foul in smell, and that removing the rind from the cheese was only a tolerable improvement. We had to remove it from the house. Melted the smell was mitigated to a certain extent and the cheese presented its better characteristics, but for many the memory of that smell was enough to dissuade from a second attempt.

Very good flavor, not too spicy but definetely a kick. An excellent cheese, but it really stinks up the fridge if you don't eat it right away and/or keep it vacuum sealed. We sealed ours and it kept very well.
