Joe Widmer's family has been crafting cheese in Theresa, Wisconsin since his grandfather John Widmer arrived from Switzerland and settled in the heart of one of the richest cheesemaking areas in America more than 80 years ago. Much like a limited edition book or lithograph, every piece of Widmer cheese is handcrafted in small batches to ensure quality. Joe just became one of only eight certified Wisconsin Master Cheesemakers in America. Their reserve cheddars are marked, labeled with a vat number and production date, then placed in special curing rooms to age. While curing, the cheeses are inspected and turned by hand at regular intervals. This six year aged cheddar is rich with notes of caramel. While it is aged for a considerable period of time, it is still moist and creamy on the tongue with a noteworthy tanginess and slightly salty finish.

Awarded 1st Place in the American Cheese Society 2007 Awards in the Mature Cheddar: Aged Over 49 Months category.

This is a great Cheddar cheese,perfect for snacking on,or grated on top of mac & cheese or any other dish where a Sharp Cheddar adds the perfect touch.My only problem with it is the price,too expensive to cook with,but grated on top helps make it last a little longer.Widmers also has a 4 year aged Cheddar that is a very close 2nd place Cheddar,plus cheaper.

I got this cheese because igourmet was out of the one I liked, and it was far and away better than the one I'd wanted. It's probably heresy to use it the way I do, which is to put it into macaroni and cheese, but, hey, I'm from Wisconsin, and this cheese takes that ordinary comfort dish to a brand new level. I also like it unadorned, with fruit and crackers. I don't know why another reviewer characterized this cheese as mild; on the contrary, it has the grainy tang of a well-aged cheese rather than the bitter bite of a conventional sharp.

I would be a foodie, but you have to eat stuff that tastes horrible with a smile, just because its fashionable. I'm a Dorset drum guy, but this is great. The only other Cheddar close to this is not offered here. It's from nasonville dairy in marshfield wi.. A 7 year cheddar thats excellent.

I love SHARP cheddar..this was the best I have found. I used to adore Black Diamond brand..but not anymore after trying this. This product would be wasted with anything else but a plain cracker. Anything else would hide the taste.I bought this during the '07 christmas holiday in a wine shop in Oriental,North Carolina (Croakertown).
