
Carr Valley Grand Canaria is the perfect hard cheese for eating or grating on pasta. Cured in premium Olio Carli olive oil, it is also excellent on salads. “Canaria is a mixed-milk cheese. We cure it in Olio Carli olive oil; the cheese is generally about a year old when we begin to sell it. It's just very lovely,” Sid explains. Grand Carnaria product has an earthy, sweet flavor and a texture similar to that of Parmesan, but the buttery flavor of Olio Carli really makes this a spectacular cheese.
We had this with other goodies (salami, herring) and the Canaria stood up well. Also good with fig bars. This is a cheese that could be eaten every day or dress up for a party tray.
